Crisfield Crab Skimmers - cooking recipe
Ingredients

1 lb. crab meat
2 Tbsp. minced green pepper
3/4 c. finely chopped celery
2 Tbsp. minced onions
1 c. mayonnaise
1 c. small cubes Velveeta or grated Monterey Jack cheese
few drops Worcestershire sauce
few drops hot sauce
1/2 tsp. lemon pepper seasoning
1 tsp. Old Bay seafood seasoning
7 English muffins, split in half
Preparation

Mix crab meat, green pepper, celery, onions, mayonnaise, Worcestershire sauce, hot sauce, lemon pepper seasoning and Old Bay seasoning.
Put muffins on cookie sheet.
Place under broiler and toast slightly.
Remove.
Mound crab mixture on muffins.
Top with cheese of choice.
Broil 4 inches from heat until lightly browned and bubbly.
Serve at once.
