Ingredients

1/3 c. shortening
1/3 c. sugar
1/2 c. unsulphured molasses
1 egg
1/4 c. nonfat skim milk
1 c. sifted flour
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. baking powder
1 c. grated carrots
1/4 c. raisins
1 1/4 c. rolled oats
1/4 tsp. nutmeg
1/4 tsp. cinnamon
Preparation

Cream together the shortening, sugar, unsulphured molasses and egg.
Sift together nonfat skim milk, flour, spices, salt, soda and baking powder; stir into the creamed mixture.
Add grated carrots, raisins and rolled oats; mix well.
Drop by level tablespoons on a lightly greased cookie sheet.
Bake at 400\u00b0 for about 10 minutes.
Makes about 6 dozen.
