Ingredients

1 1/2 c. sugar
grated rind of 2 lemons and the juice
6 egg yolks, just beaten
6 egg whites, beaten until stiff
6 Tbsp. sugar
1 pt. cream
graham crackers
Preparation

Cook the first 3 ingredients in double boiler until thick and cool.
Add 6 tablespoons sugar to egg whites.
Continue to beat until smooth; fold in filling.
Beat cream until stiff.
Fold in filling.
Roll graham crackers very fine; sprinkle on bottom of pie tins and top of filling.
Freeze 4 hours.
