Baked Vegetarian Ziti - cooking recipe

Ingredients
    1 (6 oz.) pkg. mushrooms, sliced and washed
    1 yellow bell pepper, cut into 1/2-inch dice (about 1 c.)
    1 (16 oz.) box ziti, cooked
    1 (10 oz.) box frozen chopped spinach, thawed
    2 Tbsp. chopped fresh parsley
    1 (10 oz.) pkg. Boca meatless Italian sausage, sliced 1/2-inch thick
    1 tsp. granulated roasted garlic
    1 (28 oz.) can crushed roasted tomatoes
    1 (15 oz.) container reduced-fat Ricotta cheese
    1/4 c. (4 oz.) egg substitute or 1 egg, beaten
    1/2 c. shredded Italian cheese blend
Preparation
    Heat oven to 450\u00b0.
    In nonstick skillet over medium heat, cook mushrooms and pepper 3 minutes or until soft.
    In bowl, stir together next 8 ingredients.
    Spread evenly in 13 x 9-inch baking dish and top with shredded cheese.
    Bake 10 minutes or until cheese melts and mixture is heated through.
    Makes 6 servings.
