Calabacitos Con Elote(Zucchini With Corn) - cooking recipe

Ingredients
    3 small zucchini, cut in 1/4-inch slices
    1 c. fresh or frozen corn kernels
    1 small red or green pepper, diced
    1 small onion, chopped
    1 clove garlic, minced
    1 Tbsp. butter or margarine
    1/4 tsp. salt
    1/3 c. picante sauce (adjust amount to your taste)
Preparation
    Cook zucchini, corn, pepper, onion and garlic in 10-inch skillet over moderately high heat, stirring constantly, about 2 minutes.
    Sprinkle in salt.
    Stir in picante sauce and cook, stirring constantly, until most of the liquid has evaporated and vegetables are crisp-tender, about 3 or 4 minutes.
    Makes six servings.
