Tabooleh - cooking recipe

Ingredients
    1 c. medium cracked wheat
    1 bunch long green onions, diced (greens, too)
    1 bunch parsley, diced
    3 tomatoes, diced
    1 lb. can chick peas, drained
    juice of 2 large lemons
    1/2 c. olive oil
    salt and pepper to taste
    1 Tbsp. dried mint or 1/2 c. fresh mint
    2 cloves garlic, crushed
Preparation
    Soak cracked wheat in warm water for 1/2 hour.
    Drain wheat; add remaining ingredients.
    Let stand for 1 hour.
    Makes 6 servings.
