Potato Candy - cooking recipe

Ingredients
    1/2 c. cooked, mashed Irish potatoes
    1 tsp. vanilla
    2 boxes powdered sugar, sifted
    1 jar chunky peanut butter
Preparation
    Combine vanilla and potatoes.
    Slowly add sugar until stiff dough.
    Take small portions and roll out thin on wax paper. Spread desired amount of peanut butter; roll in jelly roll fashion.
    Cool 1 hour.
    Cut into small bite-size pieces.
