Sweet Potato-Cranberry Casserole - cooking recipe

Ingredients
    6 medium cooked sweet potatoes
    1/4 c. orange juice
    1/4 tsp. salt
    2 Tbsp. grated orange rind
    1/2 c. sugar
    1/2 c. canned whole cranberries
Preparation
    Cut potatoes in half lengthwise.
    Arrange in a shallow baking dish.
    Combine orange rind, orange juice, sugar and salt.
    Bring to a boil.
    Pour over potatoes and bake in a 375\u00b0 oven for 30 minutes, basting after 15 minutes.
    Remove from oven; cover with cranberries and bake 15 minutes more.
    Makes 4 to 6 servings.
