Carrot Casserole - cooking recipe

Ingredients
    4 c. carrots
    3/4 c. mayonnaise
    1/4 c. chopped onion
    2 Tbsp. horseradish
    1/4 tsp. salt
    dash of pepper
Preparation
    Parboil sliced carrot rounds.
    Mix together ingredients with carrots.
    Put in casserole.
    Top with 14 saltine crackers (1/2 cup crushed), 1 tablespoon butter and 2 tablespoons parsley.
    Bake 20 minutes in 350\u00b0 oven.
    Add 1/2 cup shredded American cheese until melted.
