Creole Eggplant* - cooking recipe
Ingredients

2 small eggplants
1 c. tomato, chopped
2 small onions, chopped
1 c. grated cheese
2 tsp. baking powder
1 green pepper, chopped
1 egg
1 Tbsp. bacon drippings
1/2 c. bread crumbs
salt and pepper to taste
Preparation

Peel and slice eggplants.
Place in pot in salt water for 1 hour, then cook until tender.
Drain and mash.
Add egg, tomato, salt, cheese, onion and pepper to eggplant.
Stir in baking powder and bacon drippings.
Combine and place in greased baking dish. Sprinkle with bread crumbs.
Bake for 40 minutes in a 350\u00b0 oven. Makes 8 servings.
