Pink Beans - cooking recipe

Ingredients
    1 qt. pinto beans
    1 large ham hock or 1 lb. bacon
    13 oz. can tomato paste
    finely cut onion
    salt and pepper to taste
Preparation
    Soak beans overnight in cold water.
    Next day, add ham or bacon, onion, salt and pepper.
    Cook until done (about 2 hours), adding more water if beans become dry.
    Keep beans barely covered with water while cooking.
    After beans are done, add tomato paste and if necessary, more salt.
