India Relish - cooking recipe

Ingredients
    4 large sweet green peppers
    4 large sweet red peppers
    12 green tomatoes
    6 cucumbers (6-inches long)
    2 large onions
    6 Tbsp. salt
    2 c. cabbage, chopped
    2 small hot peppers
    2 1/2 c. sugar
    3 c. vinegar
    3 Tbsp. mustard seed
    1 tsp. turmeric
    1/2 tsp. ground mace
    1 tsp. cinnamon
    2 tsp. ginger root
    3 bay leaves or 1 tsp. crushed bay leaves
Preparation
    Remove seed from peppers.
    Put peppers, tomatoes, cucumbers and onion through food chopper, using coarse blade.
    Stir salt into vegetables.
    Let set overnight.
    Next morning, place vegetables in a colander and force out as much brine as possible. Chop cabbage very fine.
    Combine all the vegetables.
    Add sugar, vinegar and spices.
    Mix well and heat to boiling.
    Boil 3 minutes.
    Pack into sterilized jars to within 1/2-inch of top. Put on cap.
    Screw band firmly tight.
    Process in boiling water bath 5 minutes.
    Yield:
    8 pints.
