Potato Bacon Soup - cooking recipe
Ingredients

2 medium chopped onions
1/2 (6 oz.) pkg. Canadian bacon, chopped
2 c. water
4 medium potatoes, cubed
1 (12 oz.) can evaporated skim milk
1 (1/2 oz.) pkg. butter-flavored seasoning mix
1/4 tsp. salt
1/8 tsp. pepper
low-fat or nonfat dairy sour cream (optional)
snipped fresh chives (optional)
Preparation

Spray a 3-quart saucepan with nonstick coating.
Add chopped onions and bacon; cook and stir over medium heat until onions are tender, not brown.
Stir in water and potatoes, bring to boiling and reduce heat.
Cover and simmer 10 to 15 minutes or until potatoes are just tender.
Using a potato masher, slightly mash some of the potatoes.
Stir in evaporated milk, butter seasoning mix, salt and pepper.
Cook and stir over medium heat until heated through.
Do not boil!
Top with sour cream and chives, if desired. Makes 6 servings.
