Corn Fritters - cooking recipe

Ingredients
    2 1/2 c. cornmeal mix
    1/4 tsp. ground red pepper
    1/4 tsp. black pepper
    1/4 c. finely chopped onion
    2 Tbsp. finely chopped green pepper
    1 (2 oz.) jar diced pimento, drained
    1 (8 oz.) can cream-style corn
    1/2 c. boiling water
    vegetable oil
Preparation
    Combine first 7 ingredients in large bowl; stir in boiling water.
    Let stand 10 minutes.
    Pour oil to depth of 1/4-inch in large skillet.
    Using a tablespoon dipped in hot water; drop cornmeal mixture into hot oil.
    Fry over medium heat for 1 minute on each side or until golden brown.
    Drain on paper towels. Yields 24 fritters.
