Orange Bread(Yields 30 Muffins Or 2 Loaves) - cooking recipe

Ingredients
    1 Valencia orange
    3 eggs
    2 c. sugar
    1 c. oil
    3 c. flour (unsifted)
    1/2 tsp. salt
    1/2 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. cinnamon
    1 small can crushed pineapple, drained
    1/2 c. chopped walnuts
Preparation
    Quarter a Valencia orange; remove seeds.
    Put it through a blender or processor until very finely chopped (nearly pureed). Don't remove peel; \"trust me!\"
    Beat eggs until frothy; add sugar, orange and oil.
    Add all dry ingredients and mix well.
    Stir in pineapple and nuts.
    Pour into muffin tins or 2 large loaf pans. Bake at 325\u00b0 for 30 minutes or 1 hour for loaf.
