Orange Sweet Potatoes - cooking recipe

Ingredients

6 medium sweet potatoes, parboiled and sliced lengthwise
brown sugar
butter
1 Tbsp. grated orange peel
1/2 c. orange juice
2 Tbsp. brown sugar
paprika

Preparation

Arrange potato slices in a baking dish.
Sprinkle generously with brown sugar and dot with bits of butter and orange peel. Pour over the orange juice and scatter 2 tablespoons of brown sugar and a little bit of paprika
over the top.
Cover and bake 30 minutes, then remove cover and continue baking until brown and nicely caramelized.
