Kale Soup - cooking recipe

Ingredients
    1 large onion
    2 tsp. vegetable oil
    1 large potato, cubed
    2 (15 1/2 oz.) cans red kidney beans
    16 oz. can chopped kale with liquid or equivalent amount of fresh or frozen
    3 c. water
    16 oz. can tomatoes or fresh
    1/4 c. vinegar
    1 Tbsp. liquid smoke
    hot pepper sauce to taste
    1/2 tsp. crushed garlic
    2 large carrots, sliced
Preparation
    Saute onion and garlic in oil; add carrots, potatoes, water and kidney beans.
    Add tomatoes and juice; add kale and let simmer for about 45 minutes, until carrots and potatoes are soft.
    Add vinegar, liquid smoke and hot pepper sauce.
    May substitute spinach for kale.
