Greek Chickpeas Salad - cooking recipe
Ingredients

2 tsp. prepared Dijon style mustard
1 1/2 tsp. salt
1/2 to 3/4 c. olive or vegetable oil
1/2 c. lemon juice
1/4 tsp. ground pepper
2 (20 oz. each) cans chickpeas, drained
1 medium red onion, sliced and separated into rings
1/4 lb. Feta cheese, crumbled
2 Tbsp. chopped fresh parsley
lettuce leaves (if desired)
Preparation

Combine cheese, mustard, salt, oil, lemon juice and pepper in container of electric blender; whirl until smooth.
Combine chickpeas and onion in large bowl.
Pour dressing over and toss. Refrigerate; may be prepared several days in advance.
Just before serving, add parsley; toss.
Spoon into lettuce lined salad bowl.
