Mexican Casserole - cooking recipe
Ingredients

1 lb. ground chuck
1 pkg. taco seasoning mix
1 (10 oz.) can tomatoes and diced green chilies
1 (1 lb.) pkg. Velveeta cheese
1 (5 oz.) pkg. yellow rice, cooked according to package directions
plain tortilla chips
Preparation

In skillet, brown ground chuck; drain.
Stir in taco seasoning mix.
In a bowl, melt cheese; stir in undrained tomatoes and green chilies.
In a lightly greased medium casserole dish, place the meat mixture.
Top with cooked rice.
Spread cheese mixture over top.
Sprinkle crushed tortilla chips over casserole.
Bake at 350\u00b0 for 30 minutes.
Makes 6 to 8 servings.
