Chinese Chicken Salad - cooking recipe

Ingredients
    1 head lettuce
    3 cooked chicken breasts
    3 green onions, finely chopped
    1 c. maifun (rice noodles)
    2 eggs (optional)
    1/4 tsp. fresh ginger
Preparation
    Tear lettuce into bite size pieces and place in large bowl. Steam chicken pieces with grated ginger.
    Shred chicken and cool. Chop green onions.
    Fry maifun (rice noodles) in hot oil and drain on paper towel until cool.
    Place chicken, green onion and maifun over lettuce and refrigerate for half hour.
    Add dressing and serve.
