Oven Fried Chicken(Serves 6) - cooking recipe

Ingredients
    1 c. Hungry Jack mashed potato flakes
    1 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. rosemary, crushed
    1/4 to 1/2 tsp. poultry seasoning
    1 egg, slightly beaten
    1 tsp. lemon juice
    2 1/2 to 3 lb. frying chicken, cut up
Preparation
    Heat oven to 375\u00b0.
    In plastic bag combine potato flakes and seasonings.
    In shallow bowl, combine egg and lemon juice.
    Dip chicken pieces in egg mixture; shake in plastic bag.
    Place chicken skin-side up in ungreased 15 x 10-inch jelly roll pan. Bake uncovered at 375\u00b0 for 60 to 75 minutes or until chicken is tender.
