Ingredients

1 lb. carrots, peeled and sliced
1 clove garlic, minced
1 tsp. chili powder
1 tsp. cumin
1 tsp. paprika
2 Tbsp. lemon juice
1/2 c. minced parsley
1/4 c. minced cilantro (optional)
1 Tbsp. tomato paste
1 tsp. sugar
1 Tbsp. olive oil
salt
black pepper
Preparation

Cook carrots in salt water with garlic (about 10 minutes). Combine all other ingredients.
Drain carrots and toss with spices.
Cover.
Refrigerate.
Serve cold.
