Ingredients

2 eggs
1/2 c. buttermilk baking mix
1/4 to 1/2 c. grated Parmesan cheese
2 c. peeled zucchini, grated and well drained
cooking oil
Preparation

Mix first 4 ingredients.
Form into individual pancakes.
Cook in small amount of cooking oil in skillet, browning pancakes on both sides.

Serves 4.
