Summer Salad - cooking recipe

Ingredients
    1 lb. cucumbers
    2 tsp. salt
    1 1/2 lb. tomatoes
    2 Tbsp. chopped mint
    1 lb. zucchini
    1/4 c. wine vinegar
    3/4 c. red onion, chopped
    1/4 c. chopped parsley
Preparation
    Peel, seed and chop cucumbers.
    Chop zucchini.
    Mix salt and vinegar; toss with zucchini and cucumbers.
    Let sit for 30 minutes.
    Mix remaining ingredients and add.
    Add vinegar, oil and salt and pepper to taste.
