Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1/4 c. salad oil
    1 Tbsp. brown sugar
    3 Tbsp. vinegar
    1 tsp. pepper
    4 oz. can pimento
    1/2 c. Parmesan cheese
    1 c. cracker crumbs
    2 eggs, slightly beaten
    salt to taste
Preparation
    Cook eggplant
    until tender.
    Mix all together and bake in greased casserole for 30 minutes at 350\u00b0.
    Add grated sharp cheese and put back into oven until melted.
