Sweet Potato Pie - cooking recipe
Ingredients

2 c. mashed, cooked or canned yams
2 Tbsp. margarine
3/4 c. sugar (if canned in syrup, use 1/2 c. sugar)
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. ginger
1 tsp. allspice
2 eggs, slightly beaten
1 c. milk
2/3 c. evaporated milk
1 tsp. vanilla
1 plain pastry shell
3 Tbsp. chopped pecans (optional)
Preparation

Cook sweet potatoes or heat canned potatoes in syrup until most of the liquid has evaporated.
Beat potatoes with mixer, if available.
Thoroughly mix in margarine, sugar, salt and spices. Add eggs, milk, evaporated milk and vanilla; mix well.
Do not scrape beaters.
