Italian Baked Eggplant - cooking recipe

Ingredients
    1 or 2 eggplant, peeled and sliced 1/2-inch thick
    Italian bread crumbs (see recipe)
    1 or 2 eggs, beaten
    1/4 c. milk
    vegetable oil
    1 small jar prepared spaghetti sauce
    Mozzarella or Monterey Jack cheese
    salt and pepper to taste
Preparation
    Mix eggs and milk.
    Dip sliced eggplant into egg-milk mixture. Dredge in bread crumbs.
    Brown in a frypan with vegetable oil. Place browned eggplant slices into oven-proof dish.
    Top with sliced cheese.
    Pour spaghetti sauce over all.
    Bake at 350\u00b0 for 30 to 40 minutes.
