Eggplant Casserole - cooking recipe
Ingredients

1 medium size eggplant
1 red pepper
3 to 4 medium size potatoes
1 tomato (or a can of tomatoes)
1 onion
1/4 c. olive oil
parsley
oregano
garlic powder
lemon pepper

Preparation

Wash vegetables and cut up in chunks.
Mix in herbs.
Pour oil over mixture.
Cover with foil and bake at 350\u00b0 in the oven for approximately 45 minutes or until potatoes are done.
