Morning Glory Muffins - cooking recipe

Ingredients
    2 c. Carrot pieces
    1/2 c. Raisins
    1/2 c. Nuts
    1/2 c. Coconut
    1 c. Apple pieces
    2 c. Flour
    1 1/2 c. Sugar
    2 tsp. Baking Soda
    2 tsp. Cinnamon
    1/2 tsp. Salt
    3 Eggs
    1 c. Oil
    2 tsp. Vanilla
Preparation
    Grind in a food processor or grate together carrots, raisins, nuts, coconut and apples.
    Combine with dry ingredients.
    Add eggs, oil and vanilla.
    Mix all until combined.
    Spray muffin pan. Fill each muffin cup half full.
    Bake at 350 degrees for 20 min. Makes about 2 dozen muffins.
