Egg And Artichoke Casserole - cooking recipe

Ingredients
    1 bunch green onions
    2 (6 1/2 oz.) jars marinated artichoke hearts
    1 clove garlic
    4 eggs, beaten
    8 oz. medium Cheddar, grated
    6 crackers, rolled
Preparation
    Finely mince onions using half of the tops also.
    Cut the artichokes in thirds and reserve oil.
    Saute onions and garlic in artichoke oil.
    Combine all ingredients.
    Bake in a greased 9 x 9-inch Pyrex dish at 350\u00b0 for 40 minutes.
    Serves 4 as main dish. Can be tripled and serves 30 for brunch, cut into 2-inch squares. Can be prepared a day ahead and refrigerated.
    Re-warm about 15 to 20 minutes in a 350\u00b0 oven.
