4 egg yolks
3 Tbsp. cold water
1 c. sugar
1 tsp. lemon extract
1 1/2 Tbsp. cornstarch
1 c. flour, sift before measuring
1 1/4 tsp. baking powder
4 egg whites
Preparation

Beat egg yolks; add water and beat until thick and lemon colored.
Add sugar slowly and beat well.
Add lemon extract. Slowly add sifted flour, cornstarch and baking powder and beat. Then fold in stiffly beaten egg whites and bake in a very slow oven (may be 300\u00b0 to 325\u00b0). If top begins to brown too much, put a piece of brown wrapping paper over it.
