Fiesta Beet Salad - cooking recipe
Ingredients

2 c. dried canned beets
1 pkg. lemon gelatin
1 c. hot water
1 Tbsp. sugar
1 Tbsp. lemon juice
1 tsp. minced onion
1/4 tsp. salt
3/4 c. beet liquid
Preparation

Add 1 cup hot water to gelatin in a mixing bowl and stir until dissolved, then add remaining ingredients and stir together.
Pour into square pan or mold and chill until firm.
