Baked Sliced Eggplant - cooking recipe
Ingredients

1 eggplant
1/3 c. melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 c. bread crumbs
Preparation

Cut eggplant crosswise into 8 (1/2-inch) slices and peel. Brush each slice with melted butter.
Add remaining butter, salt and pepper to bread crumbs.
Dip slices into buttered crumbs. Bake, uncovered, on a baking sheet in a 450\u00b0 oven for 18 minutes. Serves 4.
