Kim'S Mexican Rice - cooking recipe

Ingredients
    2 c. whole grain rice (uncooked)
    1 can cream of chicken soup
    2 small cans green chiles, diced
    1 (16 oz.) carton sour cream
    1 chopped onion (medium size)
    3 c. grated Cheddar cheese
    2 Tbsp. oil
Preparation
    Simmer rice in 4 cups of water for 20 minutes in covered saucepan; do not stir or remove lid or rice will get sticky.
    In a large pan, saute the onion in oil until tender.
    Turn heat off and add soup, sour cream, green chiles and 2 cups of the cheese.
    When rice is done, stir it into this mixture.
    Pour mixture into 9 x 13-inch pan and top with remaining cheese.
    (You can top with black olives, if desired, or add some chopped chicken breast.)
    Bake at 350\u00b0 for approximately 30 to 40 minutes.
