Red Rice - cooking recipe

Ingredients
    2 large onions, chopped (1 c.)
    1 clove garlic, minced
    2 Tbsp. margarine
    2 Tbsp. olive oil
    1 1/4 c. uncooked rice
    1 can tomatoes, crushed
    1 can chicken broth
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Saute onion and garlic in butter or margarine and olive oil until soft in medium saucepan.
    Stir in rice, tomatoes, chicken broth, salt and pepper; heat to boiling, cover, turn down to low. Cook slowly 15 minutes or until rice is tender and liquid is absorbed.
    Fluff up rice with fork, spoon into a serving bowl.
