Fattoush - cooking recipe

Ingredients
    3 medium tomatoes, cut in wedges
    3 pita breads
    4 c. romaine lettuce, cut into 1-inch strips
    2 c. sliced cucumber
    1/2 c. crumbled Feta cheese
    1/4 c. red onion, sliced and quartered
    3/4 c. vinaigrette salad dressing
    1 Tbsp. chopped flat leaf parsley
    2 tsp. dried mint leaves, crushed
Preparation
    Cut pita breads into halves.
    Cut each half into 8 wedges. Place on a shallow baking pan.
    Bake until crisp, turning occasionally, about 25 minutes.
    Remove from pan and cool.
    In a large bowl, combine lettuce, cucumber, Feta cheese, onion, tomatoes and pita wedges.
    Mix vinaigrette dressing, parsley and mint.
    Pour over salad mixture and toss.
    Serves 4 to 6.
