Twice Baked Potatoes - cooking recipe
Ingredients

1 potato for every 2 family member
1/2 c. purple onions
1/2 c. chopped green pepper
salt and pepper
1 egg
1 Tbsp. butter or margarine
1/2 c. milk
1 c. grated Colby or Monterey Jack cheese
parsley
paprika
Preparation

Microwave potatoes until soft.
Cut in half lengthwise.
Spoon out (leaving skin intact) middle; place in a mixing bowl.
Add purple onions, chopped green pepper, salt and pepper, egg, butter, milk and cheese.
Spoon mixture back into potato skin.
Sprinkle with parsley and paprika, if desired.
Place in refrigerator until ready to serve.
Microwave for approximately 3 to 4 minutes (or until warm).
Serve with sliced ham and steamed broccoli.
