Squash Casserole - cooking recipe

Ingredients
    2 lb. fresh squash, thinly sliced
    1 large onion, chopped
    1 large bell pepper, chopped
    1 (2 oz.) jar chopped pimentos
    1 c. mayonnaise
    1/2 c. sugar
    1 egg
    1 c. grated cheese
    Ritz cracker crumbs
Preparation
    Slice squash into a 9 x 13-inch casserole dish.
    Sprinkle with salt and pepper.
    Beat egg with mayonnaise, sugar and pimentos. Stir in chopped onion and bell pepper, then pour the mixture over the squash.
    Cover; bake at 400\u00b0 for 1 hour.
    Uncover; sprinkle with cheese and Ritz cracker crumbs.
    Return to oven until brown.
