Mexican Rice And Bean Pie - cooking recipe

Ingredients
    2 c. pinto beans
    1 to 2 tsp. cumin
    1 c. cottage cheese
    1 1/2 c. cooked brown rice
    1/2 c. finely chopped onion
    1 small can finely chopped jalapeno peppers
    2 Tbsp. beaten egg
    1/2 to 1 c. shredded Cheddar cheese
Preparation
    Warm pinto beans slowly with cumin, stirring occasionally. Mix rice with onion, jalapeno peppers and beaten egg.
    Use back of a spoon to spread rice mixture into a 9-inch pan to make a \"crust\".
    Spread cottage cheese over bottom of crust.
    Drain pinto beans and add this as next layer.
    Bake 20 minutes at 325\u00b0. Remove from oven and sprinkle cheese on top.
    Return to oven for another 20 minutes.
    Let stand 10 minutes.
    Serves 4 to 6.
