King Crab Frittata - cooking recipe

Ingredients
    1 (6 to 8 oz.) pkg. Alaskan King crab meat
    1 small zucchini
    3/4 c. sliced mushrooms
    1/4 c. finely chopped onions
    1 1/2 Tbsp. olive oil
    4 eggs
    3/4 tsp. salt
    1/8 tsp. pepper
    1/8 tsp. basil
    pinch of oregano
    1 Tbsp. chopped parsley
    grated Parmesan cheese
Preparation
    Thaw, drain and
    slice\tcrab.
    Slice
    zucchini\tand cut slices in half.
    Saute zucchini, mushrooms and onion in oil in 9-inch skillet.
    Add crab\tand
    heat
    through.
    Beat
    eggs and blend in seasonings.
    Pour
    eggs
    over crab mixture.
    Sprinkle with parsley.
    Cook over
    low heat, lifting the edges to allow the uncooked portion
    to
    run
    underneath.
    When set, sprinkle with cheese and place under hot broiler until top is delicately browned.
    Cut into wedges
    and serve at once.
    Makes 2 to 3 servings.
