Minestrone Soup - cooking recipe
Ingredients

1/2 c. olive or salad oil
1 large onion, diced
2 large carrots
2 stalks celery
2 medium potatoes
1/2 lb. fresh green beans
4 c. water
1/2 small head shredded cabbage
1/2 (10 oz.) bag spinach
6 medium peeled tomatoes
2 medium zucchini
1 (16 oz.) can red kidney beans
1 (16 oz.) can drained white beans
4 beef bouillon cubes
1 tsp. salt
Preparation

Saute first 6 ingredients about 20 minutes.
Add rest of ingredients.
Simmer for 40 minutes.
Can add Italian cheese if desired.
Serves 8.
Is great for lunch, dinner or a party.
