Holiday Sweet Potato Casserole - cooking recipe
Ingredients

2 1/2 lb. sweet potatoes
1 c. butter or margarine
5 slightly beaten eggs
1 1/4 c. sugar
1/2 c. orange juice
1/4 tsp. salt
2 1/2 tsp. vanilla
Preparation

Mash potatoes.
Stir in butter or margarine.
Beat the eggs, sugar, orange juice and vanilla.
Turn into 1 1/2 to 2-quart casserole.
Bake, uncovered, in 350\u00b0 oven for 30 minutes.
Return to oven until marshmallows are golden brown, about 10 minutes more.
