Brandy Apple Cake - cooking recipe

Ingredients
    4 c. raw apples, peeled and chopped into very small pieces (about 5 apples)
    2 c. sugar
    1 shot brandy and liquor (fruit flavored brandy is desirable, but not required)
    2 unbeaten eggs
    1 c. oil
    1 tsp. vanilla
    3 c. unsifted flour
    1 tsp. baking soda
    1 tsp. salt
    1 c. chopped walnuts
    1 c. sliced maraschino cherries (10 oz. bottle), drained
Preparation
    Combine and mix first 3 ingredients and let stand for 1 hour. Then add the remaining by hand.
    Bake one hour at 350\u00b0 in greased and floured loaf pans or 1 large tube pan.
    (Makes 2 loaf pans or 1 tube pan.)
    Can be wrapped and frozen for later use.
