Yarmouth Straws - cooking recipe
Ingredients

1/2 lb. pie crust pastry
1/4 lb. strong Cheddar cheese
1 pinch dried mustard powder or 1/4 tsp. ready mixed mustard
1 tin kipper fillets (John West are best!)
Preparation

Before adding the water to pastry mix, add the grated cheese and mustard.
Divide the pastry in half; roll out one half into a rectangle fairly thin.
Place on baking tray; brush with beaten egg.
Place kipper fillets on pastry.
Roll out another rectangle a little bigger than the lower rectangle.
Place on top of fillets; press down all sides.
Brush over with beaten egg; sprinkle with grated cheese.
Bake in a preheated oven at 400\u00b0 for approximately 20 to 30 minutes.
When cool, trim off edges and cut into neat, bite size strips.
Serve on plate with parsley garnish. Serves approximately 12 to 15.
