Ingredients

10 Tbsp. butter
1 1/8 c. sugar
4 egg yolks
1 c. crushed pineapple
2 1/2 c. flour, sifted
3 tsp. baking powder
1 c. grated coconut
1 1/2 tsp. vanilla
4 well-beaten egg whites
Preparation

Cream butter and sugar.
Add slightly beaten egg yolks and blend well.
Add crushed pineapple, juice also.
Sift baking powder with flour and add to mixture.
Add one-half of the coconut and the vanilla.
Fold in the stiffly beaten egg whites.
Pour batter into two buttered cake pans.
Sprinkle the other half cup of coconut over the two layers.
Bake in a 350\u00b0 oven for 30 minutes.
Allow to cool and frost with your favorite frosting.
