Cran-Orange Glazed Cornish Hen - cooking recipe

Ingredients
    2 (1 1/4 lb.) Rock Cornish hens (skin removed)
    1/4 tsp. pepper
    1/4 c. cranberry sauce
    1/2 tsp. grated orange peel
    1 garlic clove, minced
Preparation
    Preheat oven to 375\u00b0.
    Place hens, breast side up in roasting pan.
    Rub evenly with pepper.
    Roast about 30 minutes.
    Meanwhile, in saucepan over medium heat, cook cranberry sauce, orange peel and garlic about 3 minutes until cranberry sauce melts.
    Brush hens evenly with sauce.
    Continue to roast for 15 minutes longer until hens are tender.
    Makes 4 servings (1/2 hen each).
