Creamed Fish - cooking recipe

Ingredients
    1/3 c. butter
    1/3 c. flour
    1 pt. milk
    1 onion
    sprig of parsley
    1/2 tsp. thyme
    1/8 to 1/4 tsp. grated nutmeg
    1 egg yolk
    1 lb. halibut
    salt
    lemon juice
    buttered bread crumbs
    grated Parmesan cheese
Preparation
    Scald milk.
    Put onion, parsley and thyme in a cheesecloth and cook slowly in the milk one hour or more.
    Remove seasoning.
    Melt the butter.
    Add the flour and brown for a few minutes.
    Add the milk to the butter and flour with a bit of salt and the nutmeg and egg yolk.
    Cook the halibut with salt and lemon juice.
    Flake when done.
    Layer some sauce in the bottom of a baking dish, then a layer of fish.
    Season lightly with salt and pepper, then add more sauce and fish and sauce again.
    Sprinkle top with buttered bread crumbs and cover with Parmesan cheese.
