Zucchini Casserole - cooking recipe

Ingredients
    4 small zucchini (6 c. chopped)
    1/2 c. chopped onion
    2 carrots, shredded
    2 1/2 c. herbal stuffing mix
    1 can cream of chicken soup
    6 Tbsp. margarine
    1/2 c. sour cream
Preparation
    Saute chopped zucchini onion and shredded carrots in 4 tablespoons margarine until tender.
    Remove from heat and stir in 1 1/2 cups stuffing mix, chicken soup and sour cream.
    Pour into 9 x 13-inch casserole dish, sprayed with cooking oil spray.
