Old-Fashioned Navy Bean Soup - cooking recipe

Ingredients
    1 lb. navy beans
    1 carrot, finely diced
    2 stalks celery, finely cut
    1 medium onion, finely cut
    3 tomatoes
    1 lb. ground beef
    2 medium potatoes, cubed
Preparation
    Soak beans in cold water overnight.
    Saute carrots, onion and celery to a golden color in heavy kettle or Dutch oven.
    Brown ground beef and drain.
    To the vegetables in kettle, add 1 gallon water or stock, if available.
    Add 2 medium raw, cubed potatoes and ground beef.
    Simmer 3 to 4 hours.
    Peel the tomatoes; cut up and add to soup.
    Salt and pepper.
    Yields 8 servings.
