Spinach Rice Casserole - cooking recipe

Ingredients
    2 c. brown rice, cooked according to pkg. directions
    3 to 4 onions
    1 lb. fresh mushrooms, sliced
    diced green pepper (as desired)
    1 pkg. cooked, frozen spinach
    basil, salt and pepper to taste
    10 oz. sliced Monterey Jack cheese
Preparation
    Cook rice.
    Saute onions in oil.
    Wash and dry mushrooms; slice and fry rapidly in margarine.
    Place cooked rice in a 13 x 9-inch dish.
    Add sauteed onions, some diced green pepper, fried mushrooms and cooked spinach.
    Add a little basil, salt and pepper and bake, covered, at 350\u00b0 for 30 minutes.
    Slice Monterey Jack (10 ounces) and place on top.
    Bake 10 minutes at 300\u00b0.
